Red Beans & Rice...ahhh eeee

well it's Monday again peeps and we got a few productive things done this weekend and had some fun too.  I put some red beans and rice on to cook late Saturday night so they cooked all night in the crock pot.
Lovely stuff and EASY   Let's get started....

Get that crock pot out...the biggest one you gots!!!  This is my newest and biggest!
Crock-Pot SCVC609SS 6-Quart Oval Programmable Slow Cooker, Stainless Steel

Now get this stuff out




1 lb dried red beans ( I did listen to my mama's voice in my head and soak them for a few hours)
sausage links of your choosing (not breakfast sausage---ick!)
3 ribs of celery, chopped
1 green bell pepper, chopped
1 red bell pepper, chopped
1 med. onion, chopped
3 cloves garlic, minced
1 heaping Tablespoon of creole seasoning ( I use Tony Cachere's...on everything!)
7 cups water or broth or combination of the two

Rice & Tabasco sauce (optional)

Add the beans to the crock pot


















Then add the sausage..all sliced up


















Now it's time to add the celery

















Then the red & green peppers and the onion



Let's divert for a moment...this is an example of how that food saver will save you so much prep time.  All of these were already in the freezer and I just removed them from their bags and broke them up a little and tossed right in the crock pot completely frozen.  I promise you...it's worth the extra effort when you get home AND it keeps that produce from going bad!! Win Win!!!






Now let's add in that creole seasoning and garlic cloves

It's time for the liquids

I used about 4 cups of chicken stock and 3 cups water....use what you like :0)
If you are feeling frisky shake in a little Tabasco...I did!


Give it a good stir...slap on the lid and let 'em cook.  At least 8 hours.

Now, I like my beans a little mushy so we cooked ours all night Saturday night and most of the day on Sunday.  When it's about time to eat cook up that rice and while the rice is cooking take yourself a mug full of those beans out and smush 'em up really good and mix them back in. This will give the beans some thickness.   
Serve up those beans over the rice and dinner is served.
We had some friends over and I forgot to snap the picture but we had a salad and some french bread along with ours.  Good stuff!!!

this was all that was leftover after the hubster took a bowl for lunch. Ahhhhh EEEEEEE
