our last meal for the trip

well peeps...it's already time to head back to the homestead!  We were going to cook out but we spent the entire day out in this

and now I look like one of these

yeah... not such a great idea for hubster and I to get a little sunburn before heading home!
Of course we stopped to buy some of this

But while we were out we decided to grab some dinner at this little place
 We have a Fudpuckers right across the street from us in Ft Walton Beach but we were over in Destin getting some furniture for the condo so we stopped in at that location.
First we ordered this

That little cutie on the left is my FudWacker (aka BushWacker)  yummo! Sorry kiddos this one is just for us big kids!

Then we had a little $1 appetizer

a small snack of fried jalapeno slices with ranch dressing for dipping.
Good stuff

Now hubster had the special "All you can eat Seafood" platter

Now while this was yummo and all but I wanted a salad so I got this

good gracious this was the biggest stinkin" salad ever!!!  It was like bottomless salad.

then we went to see the gators


fun little stop after dinner to walk off the overindulgence or killing time waiting for your table ready beeper buzzer thingy to go off.  It's off season so we didn't have to wait for a table so we walked a bit before heading back to the condo and applying copious amounts of after sun lotion.  Nite nite my peeps, we have an early day in the morning and a LONG drive!

Luscious beach food!

Hi Dee Ho my peeps!  It was a beeyouteefull day here in Ft Walton Beach, Florida.  I thought I'd give you guys a peek at some of the goodness of food substances we've been enjoying!

This was our dinner stop after arriving late yesterday.  Lucky us we  arrived in time for happy hour

oh my waking soul. I am a bona fide pizza lovin' fool and this was quite possibly the tastiest I've ever had the joy of scarfing down!  If you are in this area and want some pizza...eat here! You will thank me!

Today for lunch we stopped at a little spot on the bay called Fish Lipz
Love that name!

I had the blackened Mahi with sweet potato fries 


Hubster had the crawfish po' boy and rice pilaf 
AND

this view came with the meal for free!
Yeah I know... tough life I'm living right now!
oh and the food just as tasty as the view!

So for dinner we stopped at a little place called The Shed.  BBQ is the specialty
and it was awesome!!  I had the pulled pork sandwich with cole slaw and pickles.
Hubster and I both had the G-maw's beans and Chuck's Baked potato salad. Beans were good but hubster said mine were just as good (I know...sometimes he is sooo sweet!) but that potato salad...great googly moogly!!!  Awesome beyond awesome!!  If you are down here and need a seafood break at mealtime and bbq fits the bill...head over to the Shed and taste that tater salad for yourself!!!



well I am trying to get the hubster to come on and hit the hot tub before they close so I'll be back soon with more adventures of the beach and food. It's all in the name of research you know!!!

Road trippin'

Well the hubster and I are taking a little road trip. We are driving to North Carolina to check on his moms house and make sure it's ready to go back on the market and then down to the condo to check and make sure it's ready for rental season. Sooooooo I'm a really bad packer and I made this big mess





And just so the bathroom doesn't feel left out I messed it up real good too!






So I needed to take break and regroup. Did I mention I'm also a chronic over packer?? Yeah well I was a girl scout so I must be prepared for any event, right?????
Let's go make some scooby snacks for the trip. ;0). I think Chicken Salad Sammies are a good thought.

Let me explain my feelings on chicken salad....I'm a chicken salad purist. What does that mean exactly??? It means I don't put fru fru stuff in there. No grapes or nuts or apples or what not. Not that there is anything wrong with that stuff but for the most part, I make plain chicken salad.

Gather up this stuff



Put those two eggs on to boil. Oh come on...that's the hard part

yeah, that's more than two but i brought the rest with us

Now open the can of chicken and drain the juice and break it up a bit. Also chop up those eggs. How do you likey the retro egg chopper??? I love it!



Dump in that in a bowl and flop in a spoon full of miracle whip and pickle relish. A splash or two of Tabasco sauce with a couple of squirts of yellow mustard. Then toss in salt and pepper and some celery seeds.






Now mix that all together and taste until you get the seasoning just right



And that's all there is to it, just put it on some bread and in some Ziploc bags then just pack it up in and in the cooler they go. By the way it's now Wednesday about 1130 and we only have one left.


Now let's make some spiced pecans too (yeah I just can't face the packing again) grab some of this stuff




Coat your pecans in the honey then spread them out on a cookie sheet.




Dust them with a light coating of the blackening seasoning




Pop those in a 350 degree for about 12 mins. Just until lite golden brown.




Then put them in a nice mason jar and put it in the scooby snack basket






Then go back and face the challenge of packing and be a success!!!





Yeah, hubster says it looks like Vera Bradley threw up when I pack..hehehe

Monday--what's on my camera

It's Monday again!!  But it's still just beautiful spring weather here in Texas, maybe it will hang around awhile.   Hubby and I are embarking on a little car adventure this week...please pray for us  :-)  heehee   My reason for mentioning this is the fact that I must hurry along today as I have much to do....one of which probably needs to be a trip to the ER.
Diversion #1
Last week Chuck got himself a new ride and hubby and I were looking at it in the parking lot of the gym...I slammed my own hand in the car door and was pretty sure I broke my right index finger.  PAIN lots of pain!!!    Saturday we are out with friends and lo' and behold a man and a baby carrier caused a door to slam on the SAME FREAKIN" Finger!!!!  I'm almost positive it's broken this time. Very bruised and sore and throbbing! It's also hard to type so I'm trying something new today.. What's on my camera!
My camera stays in the kitchen because well, I cook so I take pictures in the kitchen.  So here you have random photos on my camera card...plus it gives me a good reason to clear it all off . Score!!!

ah ha.... I was making beans.  We had a cookout yesterday and made beans.  I've made them before on this site and it's sooooo yummy!

Here is a close up.  I got that cute little shamrock dish at the Home Goods store last week when I had to go to the dentist.  Dentist trips are much nicer when followed by a stop at Home Goods!

Hellloooooo

Well goooooood morning bloggy land!!

I'm off to the wholesale fabric shops (yeah, I know I can't sew but sew what--heehee).  I'm riding along with Sweet Gloria, Crazy fun Cathy and LaLaLauren.  Should be a blast but I wanted to share this from another blog because I just MIGHT eat my broccoli after seeing this. Seriously I will be trying this recipe.

Little Fruit Cobblers....and the auction

Hi Deeee Hooooooo!!!  It's TuTu Tuesday!!  I hope you all had a lovey dovey Valentines Day yesterday and I will celebrate later by removing my Vday decorations and then begin my pondering of the next holiday.  I believe I will dig out some Mardi Gras decorations before putting out any St. Paddy's day.  Life is just a party isn't it?!

So Saturday night brought about another trip to the auction and once again Monday brought about me rearranging the furniture in the house.  :0)  oh my aching back...we seriously have to buy lighter pieces at the auction!   Here is our new cutie
I am always finding these cute little "banners" to make on the craft sites but never really felt like I had a spot for them...well NOW I do!!  Every new opportunity is a new craft opportunity.

Now Sunday we decided to share a nice pre Valentines steak dinner with our friends.

That's a nice porterhouse steak, baked potato, french bread, some grilled asparagus and a gogo salad.  The hubster marinated those steaks all day and he and Frankie grilled them up along with the asparagus. LL made the taters and bread. I whipped up that salad from my cooking class and you can't see them but the spiced pecans in that salad are toooooo die forrrrrr!!!!     I also whipped up a little dessert and that's what I've been promising you so let's make the chocolate sauce first.

Chocolate Sauce cast of characters

  • 1 cup semisweet chocolate chips
  • 3/4 cup whipping cream
  • 1 teaspoon vanilla
In a small saucepan over low heat, heat chocolate chips and whipping cream, stirring constantly. Continue to cook, stirring constantly, until chocolate is melted and sauce is smooth. Stir in vanilla.


Then you need to pour that chocolate sauce into a mustard squirty bottle.  heehee  It's the only one I had and we were transporting over to LL's house.  

Now we need to make the individual cobblers.



I had frozen raspberries and frozen blueberries, so I unthawed those and let them drain a bit.
You will also need:
2 cups self rising flour                                     2 cups sugar
2 sticks butter, melted                                      2 cups milk
1 tsp. vanilla
Combine the flour and sugar




Once you have those combined you are going to slowly pour in the milk and mix to combine
Now we are going to pour in that melted butter.  YES both sticks!!!  You are worth it...go ahead!!!!!!
Now just mix to combine and then add the vanilla to the mix.  
Spray your muffin pans really good with a non stick cooking spray and then dump about a quarter cup of batter into each tin

Now take that fruit and just plump it on top of the batter...don't push it in, it'll sink on its own


now you just take about 1/4 tsp of sugar and sprinkle over the top of each little goodie

Pop those in the oven and bake for about 40 minutes at 350 degrees
Take them out of the oven and then plop them on the plate and show them some major lovin' with some of that chocolate sauce and also a big ole' scoop of blue bell homemade vanilla ice cream


There you have it.....truly yummmo.  What would I do different next time?  More fruit! I thought I could have been more generous with the fruit so next time I'll add lots more fruit.  We had some batter left over and I had just popped it into the fridge so last night after the hubby and I got home from a quick Valentine date I made up two more.  It tasted just the same so from my point of view there is no reason you can't mix this batter up the day before or even stretch out the leftover batter for fresh little cobbies all week.  

It's absolutely gorgeous outside so I'm off to get a little housework done (company coming this weekend) and then it's outside to get a little yard work done!!! woooohooooo I love spring days in February!!!
