Chocolate Lover Brownies

But more aptly named Chocolate Lovah Brownies!

Well it's Friday peeps and the weekend is here again.  Man this week just flew by!!
Maybe because it's so stinking hot everywhere that we just melted from one weekend to the next.
Yep it's definitely summer because it's not just hot it's HAWT.

This time last week I was up to my elbows in brownies for the wedding so today I thought I'd share with you the 3rd type of brownies I made for the wedding.  First up I have to show you the table where the brownies were at the wedding,

(which reminds me...I have to get a close up picture of the Lego Parkour Park we made for Austin before he takes it away)  It's cool I'm back now.  While the photos were uploading I took care of that little job.  I'm a tad ADD sometimes (or maybe just getting old) so I just have to stop and do things when I think about them.  It's a sad reality folks.
Anywho there were the ever yummy Dark Chocolate Raspberry Ghiradelli brownies and just plain ole' regular brownies and then there were the Chocolate Lover Brownies a.k.a.  Chocolate Lovah brownies.
Let's get this party started!!


This is what you need and here is the printable so you know how much of this stuff you need.
It seems like a lot but no worries it's easy.



Combine the flour, cocoa and salt in a bowl and set aside.
Sift if you can and if you find it against your religion that day then just whisk them together.



Beat the butter, sugar and brown sugar until creamy.



Seeeeee that's creamy!!



Now add TWO of the eggs but add them one at a time and beat well after each.
Then you can add the vanilla.



SLOWLY add in the cocoa mixture.  Slowly unless you like creating a cloud of chocolate in your kitchen in which case just flip that mixer on high and have a hey day!!



Once that's all mixed up you need to save 3/4 cup of that batter in a small bowl.
No....I do not ask you to save the batter so you can eat it by itself but hey, that's not a bad idea.
Not afraid of the salmonella around these parts. No sireeee bob.



Spread the remaining batter into the prepared pan



Now add a layer of pecans on top of the batter then add the white chocolate chips.
Oh yeah, it's getting good now!



Now pour that caramel ice cream topping over the top of that deliciousness.
Yeah you heard me. Just do it!




Now take that batter that you saved and dump it back into the mixer bowl and whip in the remaining egg until it's light in color.  Don't worry, you'll see the difference.

Now grab those semi sweet chocolate chips and mix those gently into the batter



and spread that evenly over the top of all that other yummy stuff.
It's a little tricky to do but be patient and take it slow. The reward is great my friends.

Bake those for 30-35 minutes in a 350 degree oven.
Then you must must must let them cool for at least 30 minutes in the pan before cutting.
Unless you are shooting for Chocolate Lovah pudding then who am I to stop you??
Oh and if you do that you should probably cover up the whole thing with vanilla ice cream.
just sayin'



Once those babies have cooled you will be vastly rewarded with this beautiful thing.



It IS a beautiful thing you know!




And then if you feel really frisky go ahead and plop a dollop of whipped topping and then of course you need to add a cherry on top and then you"ll need to drizzle some hot fudge sauce over the whole thing.   We don't do things half baked around here do we?

Now in other news:



I'm not perfect with this whole cooking thing and I occasionally have a kitchen boo boo or two of my own.   Oh yeah, the whole bottom of the pan had the black charred baked beans on it.



And the exciting news for me...... I got my first ever check for this little ole' blog of mine!
Yep that's a check for my Cool Whip whipped topping post!!  I'm over the moon happy about it and I still haven't cashed it.  I'm thinking of doing the electronic deposit thing with it so I can keep the check.

Gran's Strawberry Pie....a.k.a. Shoney's pie


Well Happy Tuesday Peeps!!  I don't know about where you live but it is H O T hot up in here!
Today is another one that I've been saving up for you guys and since it's about fifty billion degrees already I thought I would share this cool creation today.

I'm not gonna lie, I think I could honestly eat this whole pie by myself. It is so yummy and cool and fresh and brings back such wonderful memories.  This pie is a like the strawberry pie you could get in Shoney's/Big Boy restaurants. Although they probably used real whipped cream I'm a personal fan of cool whip.   No discrimination here my friends...cool whip, whipped cream I'm not gonna complain.  Just make sure you top this with one of them.  


You will need this stuff
Don't worry I'll give you a printable link later...oh what the heck here it is now


First things first, let's get the pie crust in the oven.
Before it heads to the oven make sure you lay it out in the pan and the prick it with a fork.
You know, to keep the pie crust from growing gigantic bubbles in it.


Now while that is cooking you can go ahead and mix together the sugar, salt and cornstarch.
Just whisk it around in a heavy duty saucepan.


Now add the water to the mixture and cook until thickened.



See how thick it looks on the spatula?  That's how you know it's ready.


Add in the strawberry jello then the vanilla and a couple of drops of red food coloring.




Stir that all around.  Yeah, I know it looks really red but it's ok.
Let that mixture cool really well.



Now you need to fill that cooled and baked pie crust with some berries.



Don't be stingy now because it IS a strawberry pie!!



Once that congealed mixture is cool you can just pour it over the top of those berries and just swish them around gently to mix everything up together.
Hey just for fun make a little fanned out berry for the top.



Look at that pie... I can almost hear the forks clinking on the plates and the waitress yelling out orders.



Don't you love food that can bring back sights and sounds and smells from the past??!!



Go ahead put a slice on a plate and plop some cool whip on top.



I mean you HAVE to test a piece first, right??



We really wouldn't want to be rude and serve bad pie now would we?



The only thing missing is the Shoney's Hot Fudge Cake. It's times like that it's good to have a sister, you know one of you gets the strawberry pie and the other the Hot Fudge Cake!!

By the way....Anyone have that Shoney's recipe for the Hot Fudge Cake?  I'd love for you to share it if you do!!  What kind of foods bring back memories for you guys? Did you ever eat at Shoneys when you were younger?

Home Made Mango Ice Cream

Hey There Peeps!!!

It's Monday...I'm exhausted and no I didn't just make this ice cream.
It was wedding weekend and my house has been full and busting at the seams with love and fun and laughter!!

The wedding was beautiful and things went smoothly and now the happy couple is off to Florida honeymooning with Tropical Storm Debby.  Don't worry I'll be sharing some wedding photos with you guys soon!


I made this yummy ice cream a few weeks ago when some very ripe Mangoes arrived in my basket and  I needed to do something with them super quickly so I did what any normal sane ice cream lover would do.  I made ice cream duh!!!
I'm not a huge mango fan but have been told I would be if I'd ever had a good one.  Well I still don't know if the mango is worth the trouble to eat but this ice cream sure was yummy.


Here's what you need:
3 large mangoes, peeled, seed removed and cubed (approx. 2 cups)
3/4 cup sugar
Juice of 1 lemon, freshly squeezed
1 cup half & half
3/4 cup milk




Combine half & half, milk and 1/2 cup of the sugar in a bowl and stir well to dissolve the sugar


I ended up whisking the mixture and it worked better



In a food processor (or blender) puree the mango, 1/4 cup sugar and lemon juice until smooth



See how pretty it is??





Now pour that mango mixture into the milk mixture



And stir it up really good.



Now a little trick I've found is I go ahead and get my ice cream freezer ready and have it spinning before I start pouring.



Now just pour that mango lusciousness into the ice cream maker.



Let it do its thang and turn that into a frozen concoction




When it's done you should have some




No really....you NEED to have some



You peeled those mangoes and you deserve it!




Look at the creamy fruity goodness and just scoop out a spoonful.




Ah yes bring it to your mouth!!!



Stick your face into dish and lick up every last bit of it.

Sooo I'm guessing someone is out there thinking...."hey Samma, can we use any fruit in this?"
I'm gonna go with yes because I'm just about to mix up a batch of peach myself because you know it's like a bazillion degrees in Texas!
