Strawberry Pie...ah la Old Shoney's style

Morning Morning my peeps!!

I have an eye appointment this morning so we are off and running early this wonderful day!  Before we start....Happy Last Day of Spring Semester classes to my Abogg!!!  Yep, today is the last day of classes for Baylor and it's so hard to believe the spring semester is pretty much over but the finals.  It'll be nice to have him home again for awhile before heading back for the second summer session of classes.  Our Court has another week or so of classes before her finals begin and we don't get her at all this summer.  She'll be staying at school for both summer sessions.   It's tough letting these kids grow up!!!

Today we are gonna make a Strawberry Pie!!!  Normally this is more of a summer treat but I went to the ole' cost of co. on Friday before Easter and they had these luscious berries sooooo....PIE it is!!!!
I truly truly love this pie and it's so easy and I can't ever figure out why I don't make it more often.  Hmmm, maybe 'cuz I'd eat the whole dang thing!!!


You'll need this stuff:
1 cup sugar
1 cup water
3 Tbsp corn starch
pinch salt
3 Tbsp Strawberry jello
Fresh berries
1/2 tsp vanilla
Baked pie crust
couple drops red food coloring

First thing....get that pie crust in the oven.  Me....I cheat and let the dough boy help me out. Hey, if you make your own pie crust then bless your heart and you go knock yourself out.  I personally have not mastered the pie crust and just take the easy way out.




Mix sugar, salt and cornstarch.  Add water and cook in saucepan until thickened.



Add the strawberry jello and stir until dissolved


looks yummy already!!

stir in the vanilla and a couple of drops of red food coloring
Set aside and let cool



chop up the berries


yep...they were super yummy berries too!!


put your berries into the baked pie crust then pour in the gel mixture



keep pouring...make sure you get it all!!!



Now pop this little pretty in the refrigerator and let chill until it's congealed.



Cut yo-self a big slice and slap some whipped cream on top and enjoy!!
Yep...see, it's like the old fashioned pie that Shoney's used to serve.



what's this....well this is the non berry lovin' Abogg's dessert. 
Mini angel food cakes with Blue Bell's homemade vanilla ice cream, hot fudge sauce and whipped cream.  Gotta admit his was looking pretty good too!


Now...find those fresh strawberries in your neighborhood and make some pie!!!
Btw---this also works really well as a peach pie when those peaches are in season.

Easter bunny bait snack

well...I promised I'd be back today with the Bunny Bait recipe.  Now while we don't have little ones around here we still enjoy the seasonal goodies, some days a little too much! I made bunny bait and I can see that bunny bait may become, cupids candy, leprechaun gold, Yankee Doodle's dandy.....etc.  you catch my drift, I'll be making this again!  Super Simple and yummo


This is what you need....AND if you remember to go to the store before 11 pm the night before the holiday you will find the appropriately colored holiday m&m's.    I did not so we improvised!



First pop two bags of the microwave popcorn.  I like this particular brand but get whatever your family enjoys or whatever you have on hand.  Orville Redenbacher's Gourmet Microwavable Popcorn, Tender White, 6-Count Boxes (Pack of 6)

Put the popcorn aside in a large bowl and melt the candy melts in the microwave.  I used pink because I thought I could find the Easter candies but oh well...... it still tastes good but just make sure you get the vanilla candy melts.



Once the candy melts are melted (follow package directions) then just mix that all in that big bowl of popcorn.  You can be all dainty and use a spoon or spatula but honestly...the hands are the best tools!


Now mix in the M&M candies  (I just happen to have used the mini's this time, next time I'll use regular and you know....I'm thinking I may try the peanut too!)


and just for fun I threw in some sprinkles....because hey, life is better with sprinkles!



now spread it out and let it dry a bit



put in a bowl and serve....then run from the room so you don't eat the whole bowl!! 
You can also package this up in individual treat bags for the kiddos at school or church or daycare.
OR you can do like I've been doing for days and BEG your husband to take it to work to get it out of the house.  It's seriously addicting!  BTW...it's still on the counter calling my name.

finally back!!

 My goodness my peeps it's just been so long!!!   So much to tell you so I'll try to keep it brief.

I went to Florida to our condo...here are a few photos

I packed and it looks like Vera Bradley puked on my bed  (at least that's what hubster says)
by the way....I'm a chronic over packer!

Now it was also Easter so we:


got Easter baskets full of goodies

picked gorgeous roses from the yard


flew kites



got kites stuck on the roof


and in the neighbors tree



colored Easter eggs



let those dry





talked on the phone



made yarn bracelets and lego star wars



teased the dog while she was sleeping

and made lots of yummo food which I promise to share with you later in the week!!! No really..I promise



In my personal Lent commitment, I vowed to complete the Couch 2 5K program and I did it!!! Yep, before church on Easter morning I completed my last workout with the program.  When I started it I thought running 3 minutes at a time was all I could do, now...I'm running 2 miles in about 32 minutes NONSTOP peeps!!!   I'm not a runner, never have been, never will be hard core.  I don't think I'll see more than 5k's in my running future but it's enough for me and I've proved to myself that I just might be able to do it.  The program is finished so now I'm working on my endurance and time 'cuz I don't think it'll be a great thing to run a 5K in a 2 hour time frame!! In the meantime to celebrate I gots some new shoes
I swear for this Kentucky born girl...these are the closest things to being barefoot
(and if you know me...I am barefoot about 90% of the time)

AND they could please tell the Tom's dude that I really want these

7.5 please and when those new crochet ones come out in June...yeah those too please!!



So I think I've caught you up on a few things and tomorrow we're making Bunny Bait snacks and we'll start on the Easter dinner.

Bomb diggity bomb bomb Banana Pudding

Hey peeps!!!
I have so many things to be telling you but my schedule is just out of sorts this week.  I wanted to post some of my weekend yummies yesterday but we had a clothing emergency in Waco!!  Seems the Abogg has gotten himself invited to a semi-formal sorority event on Friday night and well...he has nothing but jeans, tshirts and shorts at school.  Soooo, off to the Waco I go.  We find a crazy nice gentleman in the men's suit department of the Dillards and he proceeds to fancy up the Abogg.  The best part....he completely understood when I told him these clothes were probably a short term investment. :-)   We're pretty sure the Abogg is not quite finished growing!!  The nice man even taught Abogg how to tie a tie, steamed his shirt for Friday night and gave him his card with his number on it in case Friday night rolls around and he has a last minute clothing emergency.  You know...it's why I pay a little more but the service at Dillards is worth it!

OK...onto food!!! So Saturday the hubster had his company strategic planning meeting at our house.  They started bright and early Saturday morning and finished up around 6pm that night.  Then it was time to cut loose and have some fun.  I had a vegetarian to deal with (never happened to me before for a dinner party) so I decided on a pasta bar.  I made the meat sauce on Thursday...'cuz you know it's better when it sits around in the fridge for a few days!  I also grabbed a really nice jar of marinara at the ole' Central Market and heated it up.  I also made for the very first time EVER.....Fettuccine Alfredo!!!!  Oh man... I don't even like that stuff and it was good!!!  My new vegetarian friend...well, if he could of he would have licked his plate.  Thanks Pioneer Woman..you saved me!!  What's that you say....pictures?? of the Fettuccine Alfredo???  ummm...well you'll just have to take my word for it because I was probably on about glass number 3 or 4 of wine by the time that came around.  Never fear....Sweet Gloria was backing me up and making sure I followed the directions!!!

One dessert I made was Banana Pudding and that's what you're getting today!!!

Cast of characters:
1 can eagle brand milk
8 oz cream cheese, room temperature
3 cups milk, I use whole milk
Lg. box vanilla instant pudding
Container of cool whip
1 box vanilla wafers
3 or 4 bananas, sliced




In bowl, whip cream cheese and eagle brand together. Mix until smooth.
Add the milk and pudding mix, stir until combined well.  Add cool whip and beat.



Place vanilla wafers in bottom of your bowl.  


Next add a layer of bananas




Then add a layer of pudding mixture: keep repeating

until the bowl is full and end with some wafers on top to make it "purty"


stand back..admire, take pictures and forget to move the milk jug


take from another angle and forget to move the measuring cup



ahhh..heck just put it on a dish and eat it up!
well, actually you need to chill it in the fridge for a bit before you eat it up but you get the idea!

It's good..make some and if the Abogg is coming....make him a special bowl that you leave the bananas out.  Call it...banana less banana pudding :-)
