BabyCakes...take 2

Well folks...I told you there would be a follow up to part 1 of this series!
I had to calm down with the BabyCakes cooking because I was afraid my dear Brother-In-Law would rebel and stop tiling in my kitchen!!  I don't think he found tiny foods nearly as fascinating as I did!

For instance he passed on this little lunch snack......




I took the smallest biscuit cutter and cut some tiny little rounds of bread.
(this was actually not even two slices of bread--see it's a diet trick too!! You feel like you are eating so much more than you really are...GENIUS!!)



Now drag some lunchy meats stuffs out of the refrigerator
Here we have peppered turkey, colby jack cheese, pickles and mustard



First in goes a little bread then a little turkey



then a little bit o' mustard



followed by a pickle and the cheese and topped off with another tiny little bread circle
Just close the lid and toast those babies up until that cheese melts



Toss them on a plate with a few Bugles and there you have it!
A tiny little lunch!!

And since BIL skipped on lunch I hated for him to miss out on a day without tiny foods....



I made tiny cornbread for dinner

everybody say ahhhh..cuuuute!!!




Now so he doesn't completely rebel I decided to go ahead and make him some Taco Soup.
He was happy and I had more tiny food. Win Win!!

Then just to make sure I got my daily dose of tiny foods in:



I put one of the tiny brownies in a bowl with a scoop of ice cream and some hot fudge sauce.
Yummmmmoooooo and see.....portion control!!  WINNING again!

Garden Ridge is a scam company

No matter what you do don't spend your hard earned money at Garden Ridge.
They sold us faulty Christmas lights but when we tried to plug them in and they didn't work...they DON"T CARE.   No refunds, No exchanges!!!!

What a crappy excuse for a company.  I hope anyone and everyone who reads this tells everyone they know to never shop this company again.  We have so many places who care about getting and keeping our business in this tough economy but I suppose Garden Ridge isn't one of those companies!! They must have plenty of money that my business isn't necessary.

I apologize for the rant but companies that are run like this don't deserve to be in business!!!

D'oh Nuts....Donuts

Call me Homer Simpson but I do love a good doughnut.  However my doctor and my jeans prefer that I not eat them very often.  What's a girl to do???  Well, you buy yourself a doughnut pan and bake them in the oven!!  Yes sir eeee bob!!   That's just what I did and you can too!!!

Time to make the doughnuts!







In a bowl you need to mix together your dry ingredients.

  • 1 cup cake flour
  • 1/2 cup sugar
  • 1 teaspoon baking powder
  • 1/8 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1 teaspoon cinnamon
  • 3 tablespoons dried buttermilk powder


In a separate bowl mix together the following wet ingredients

  • 2 large eggs
  • 3 tablespoons vegetable oil
  • 2 tablespoons water



Beat those wet ingredients until frothy
Now dump the wet into the dry all at one time



Mix just until moistened and combined
it's not the time to take out your frustrations...delicate batter people
be nice



now fill your doughnut pan about half full 
and pop in a 375 degree oven for 10-12 minutes
They are done when the tops spring back when touched



See how nice and golden they look!!
Now while they were warm, I dumped them from the pan
and rolled then in a Cinnamon Vanilla Sugar mixture

It's all about the accessories; even for doughnuts
 


and then I had hot fresh baked doughnuts from my own oven


yes they were yummy....would they have tasted better if I deep fried them...probably
but you know I didn't and for that reason, I can have two!!!

The next doughnut I'll be trying...Red Velvet Cake doughnuts with a cream cheese glaze
Yeah that's healthy right???!!!!!

Adventures in BabyCakes...part 1

Oh yeah...part 1 because I KNOW there will be sequels!

So let's start things off with I finally broke down and purchased this little baby

Yes folks you too can have one of these lovely little items.
I got mine Kohl's on sale WITH and extra discount...SCORE!

First thing...I decided to make egg cups



I got some egg beaters, some cheese, jalapenos, diced ham and tomatoes


and dumped it in the maker....yeah, I only tested one at a time
I had a few missteps...I tried using a piece of bread but the bread got too crunchy

I also tried the cheese on the top but that was a little hard to tell if the eggs were done
I found the best way was to put the egg beaters in, then the cheese, and then the veggies/meat



These were YUMMMYY to the max!! 
I can see making a bunch of these and freezing them for quick heat and go breakfast.

I'll experiment the next time with a piece of biscuit dough or crescent roll around them.



While I was digging around in the fridge-o-rator I found the little pre-made cookie doughs and said...
Why not??
So I did
It was good...really good....like where was this little gadget when it was 150 thousand bazillion degrees outside and I couldn't use my oven???

WINNING!!!  So far egg cups and cookies are a success!



gosh I wish I had more tomatoes, those egg cups were so yummy!





So let's leave the Babycakes macine for awhile and make something with all these apples!
First we cut and core the apples.

Dump them in the crockpot

Now mix in the following:
1 teaspoon cinnamon
dash of nutmeg
3 Tbsp cornstarch
1 cup sugar



Now cut some cubes of butter up and dot over the top.
I used 3-4 Tablespoons
Turn on low and cook for about 6 hours



I just removed them from the crock pot and added them to freezer containers



Popped them in the freezer to save for later!


Back to BABYCAKES!!!

It was pretty chilly last night and for some reason tomato soup and grilled cheese was sounding pretty good!!! 

So I used a shot glass and cut some bread into tiny circles, melted a little butter and brushed one side of each circle with the butter.  
Butter side down in the machine then add some cheese then another circle of bread butter side up.
Let the bottom side brown and then flip (I did not close the machine for these)




TA DAAAAA....tomato soup and tiny little grilled cheese bites!!

First thing this morning I'm thinking..what can I make??
sorry...I get that way with new kitchen toys!

I found a box of Pumpkin bread mix in the pantry 
I mixed it up
and......


you got it!!  Tiny little 2 bite pumpkin bread muffins
These were also yummy!!



I had a couple then froze some to see how they do when reheated.


Not to stop....I dug out a box of brownie mix




I should have stopped.....You MUST use the liners when making the brownies as the above photo shows so very well!!



and then even when you use liners...you should be careful when picking them up.
you might drop them...just sayin'

The brownies weren't pretty but they did taste yummo so I froze a few of those too!

Now if you'll pardon me, I'm off to find something tiny for lunch to make!!!
It's an illness, I'm sorry!!  And has anyone else noticed that I bought a BabyCakes CUPCAKE machine and I haven't even made a cupcake yet??!!!

Pecan Crusted Chicken Tenders...oh yeah ya'll

Happy TuTu Tuesday!!!

I promised I'd be back with a goodie and I shall not fail you today!!

So I had this chicken and was all like "what the heck can I do with this chicken that I haven't already done".  Well I don't know about you but when I ask myself those kind of tough questions I just turn to the expert.....PINTEREST!!     hahaha  yeah you got it baby, it's the next best thing to google!!
However please don't be deceived, I've made more than my share of well shall we say...not so good items from the old Pinterest board too.   As a matter of fact this past weekend I made not one but two items that just didn't quite do it for me.  So yeah, I'm deleting those bad jammas from my boards!!

These were yummy so we shall make them!!


First up you are going to need this stuff:
1 cup Bisquick
1/2 cup to 1 cup finely chopped pecans  (as you can see the food processor did this work)
1 tsp paprika
1/2 tsp salt
1 tsp Creole seasoning

Combine all of the above and mix well, set aside



In another bowl pour 1/2 cup of buttermilk

Find you about 2 lbs. of chicken tenders



Dip the chicken in the buttermilk, then dredge it through the pecan mixture
(sorry, I must have gotten excited and forgot the photo!)



Lay those all side by side in a baking dish
I had to use two baking dishes and yes, I did spray them before I started.
My theory...better safe and spray than sorry and scrape!



Now drizzle about 1/4 cup of melted butter over the top of the chicken
Pop in a 350 degree oven and let bake for about 18-20 minutes.


Now we need us a little Honey Mustard Dressing to go with that there chicken



1 1/2 cups mayo
1/4 cup dijon mustard or spicy brown mustard
1/2 cup honey


mix that up all together and good



Slap it in the jar and chill until dinner is ready!
(sorry Court--- I forgot to pack this in your bag before you left the other night)



gets them chickens out of the oven and have yo self a feast!!
These were really good and I declare them a keeper!!

By the way, have you seen these in your grocery??



I think I'm in love....no really I think I am!!
I love fall...even if it has been 85 degrees this week!!!  :0)
