First of all Saturday we headed over to the stock show. I love the stock show, makes me want a ranch every year, the only difference each year that urge gets stronger. I love seeing the kids with their cows, horses, rabbits, goats, etc. and the pride that is still out there for that way of life. So here I give you a few pictures from the stock show (don't worry I won't bore you with all of them)

I think I fell in love with this one....just gorgeous and so sweet!! I'm telling you....I am developing an addiction to cows.
I know I'm sorry...just this weird thing my son does to me and seriously did you ever see such a big butt on a chicken. But wait here's the chicken!
Did I mention I want chickens too? Yep, need me some fresh eggs!! Speaking of that while we were looking at some of the chickens one of them just plopped herself an egg out right there!
So while I could keep going with the Stock Show pics I will move on to some other items of interest.
After the stock show with met up with Chuck and headed over to the auction where I managed to finagle the bidding card from my hubby and picked up this little beauty.
Got the dresser and the butter churn. This was also the source of my very busy non-productive day yesterday! I had to move furniture all around the house because there was no way Jose this thing was getting upstairs....toooooo heavy for this girl.
Now for Sunday....I'm not sure what we did all day to be honest but in the end LL and Frankie came over for some dinner and I made hubsters fave, cherry delight for dessert. This is Ms. Jackie's dessert and one of the many reasons hubster was so sad when she moved off to Hotlanta. Glad she was kind enough to share her recipe since she's so far away now.
These are the crust ingredients:
16 graham crackers, 1 stick melted butter, about 1 Tablespoon sugar. Crush all those graham crackers, mix in the sugar and the melted butter. Press into a pan and bake at 325 degrees for 10 mins. Then you have this to sit off to the side to cool a little.
Now we need to make the filling with these:

You need cool whip, cream cheese (softened) and 2 cups of powdered sugar. Blend that all up nice and smooth and pour over the crust.

then you want to cover it with some plastic wrap and slip it in the refrigerator for a couple of hours to chill. You will also need to stop your dear hubster from sneaking in to the kitchen to sneak a bite. Now we need to get these taters all done because these were sooooooooooooooo deeeelish!!!
First we need to fry us up some bacon!
It is also important that you don't accidentally leave the burner turned up on full blast o'heat lest your pan end up charring like me. Thanks to Frankie...he cleaned that baby all up nice and shiny after dinner!!
Now we need to get some potatoes baking in the oven
Now when that bacon is ready you need to crumble it all up and then gather up some other yummies like this for these here taters
now that the taters are all smashed (not mashed, just smashed) we need to add the butter sweet mercy....YES put the whole stinkin' stick of butter in there!!! do some aerobics later because it's worth it!

now stir it all up
add those French's onions and some salt and pepper and stir up good and then sprinkle a few more French's on top for some flairSweet mother of mercy...these things are sooooooooooo amazing!!! Here was dinner:
and here's the full recipe for Amazing Smashed Potatoes
5 large whole red potatoes
1 stick butter (softened and cut into pieces---make sure butter is not cold)
5 slices bacon cooked and crumbled
2 whole green onions, sliced
3/4 cup sour cream
Salt to taste (add plenty and test)
Pepper (to taste)
3/4 cup French Fried onions then more for sprinkling
Bake potatoes until fork tender, add to a large bowl and smash with a potato masher. Immediately add the softened butter, green onions, bacon and sour cream. Mix well then add the salt and pepper and mix again then add in the French's onions and fold those in the mixture. Sprinkle a few more green onions or French's onions or both on top and serve immediately and be loved, adored, praised and worshipped!! :0)
