The first efforts...Corn Creole and Mayo Biscuits

Here goes folks.....
First up ... Corn Creole

















First up you need some bacon grease...don't judge me because I have bacon grease on hand!  Please people, have some moderation and it won't kill you.  Unless you eat it by itself then you have larger problems!
This is a little more than 3 Tbsps so after it melted I poured some back in the container....no really I did!
Heat this until hot and then add the onions and green peppers.

See, it already looks yummy! 
Now cook these on medium heat until they are tender and slightly golden, about 10 mins.

Now to the yummy cooking goodies above add the can of cream corn. Mix that in really well then add the milk and well beaten egg to the mix.  Stir (CAREFULLY- the pan gets full) to blend then add the cornmeal and stir gently until mixture thickens.  I wasn't sure about this since I have no guide to follow but it did in fact thicken right up.  Amazing!  Now season the whole mixture up with salt, black pepper and cayenne pepper to taste.  I was easy with the salt and more generous with the cayenne pepper, it's a Louisiana recipe after all.

Now dump this yummy goodness into a greased oven safe casserole dish and top with dots of butter (real butter people..c'mon) and then bread crumbs.  Pop that baby in the oven at 350 degrees for about 30 minutes. It will get nice and golden brown on top.  Like this....
Enjoy!!!   Hubby said it tasted like he remembered...I questioned him repeatedly, I think he was getting slightly annoyed, but anyway we enjoyed this with a salad and my next recipe Mayo Biscuits. 


Time for the Mayonnaise Biscuits

Pretty simple cast of characters. 2 cups self rising flour, 1 cup milk and 4 Tbsp Mayo (the real stuff people). Just mix these all together....
and drop by scoopful into greased muffin pans.  Bake at 450 degrees for about 10 minutes. Take them out when they get all brown and beautiful like this.

Then butter 'em up and call everyone to dinner!!

See.. I told you not to judge me.... we had salad to combat the bacon grease and butter.  :0)

Full recipes:

Corn Creole
3 Tbsp bacon or veg. oil
1 1/2 cup chopped onion
1/2 cup chopped green pepper
Can Cream Corn
1 lg egg... well beaten
2 cups whole milk
1/2 cup yellow cornmeal
salt, black and cayenne pepper to taste
1/2 cup dried bread crumbs
3 Tbsp butter cut into pats

Heat bacon drippings in a large heavy saucepan (can't go wrong with the iron skillet here) on medium heat then add onion and gr. pepper.  Cook, stirring occasionally, until soft and lightly golden, about 8-10 mins. Add the corn and stir to mix then add the beaten egg and milk.  Stir to blend well and then add corn meal and stir until mixture thickens. Season with salt, black and cayenne peppers to taste.
Pour into lightly buttered casserole dish, add pats of butter and bread crumbs. Bake until bubbly and golden for about 30 mins on 350 degrees.

Mayonnaise Biscuits
2 cups Self Rising Flour
1 cup whole milk
4 Tbsp mayonnaise

Mix together ingredients and pour into greased muffin tins. Bake at 450 for 10 mins. 
The batter should be made a few hours ahead of time and allowed to sit until ready to bake.
